It’s International Coffee Day, the day where Father Coffee leaves macchiatos for little girls and boys all over the world under their coffee bean trees.

Joking – it’s not quite that big. But we here at Metro.co.uk still take our coffee very seriously.

Ever wanted to learn to make delicious, rich, mouth-watering coffee ice cream without breaking the bank on a long list of ingredients? (Nigella: no one has tamarind paste in the cupboard!)

Then you’re in the right place, as we have a super easy recipe that requires only three ingredients – don’t say we don’t treat you well.

Ingredients

So you’ve decided to treat yourself to some home made ice cream – now what?

You’re gonna need some ingredients. Three, to be precise.

  • 1½ tbsp instant coffee powder (or more if you like it strong)
  • 250 ml double cream
  • 175 ml sweetened condensed milk

You’ll also need some boiling water and a pinch of salt.

Feel free to make the recipe your own by adding chocolate chips, crushed nuts, or toffee pieces.

You can also use vegan dairy-alternatives or decaffeinated coffee – it’ll still taste great!

Utensils

  • Small bowl
  • Cling film
  • Bowl
  • Spoon (or an ice cream scoop for you guys out there fancy enough to own one)
  • Loaf pan
  • Hand mixer with beaters
  • Rubber spatula

Method

  1. Mix the instant espresso powder with equal parts boiling water, stir to combine, and set aside to cool.
  2. Beat the cream with a hand mixer until thick.
  3. Stir in the cooled coffee, sweetened condensed milk, and a pinch of salt
  4. Transfer your mixture to a cling film lined loaf pan. Then cover with cling film and freeze for at least 4 hours.

And that’s it!

Serve in a bowl, in a baked alaska, or eat it straight from the tin – totally up to you.
