One of downtown Loveland’s newest restaurants is taking a spin on a classic Japanese dish with a heavy focus on quality.
Sushirito, which opened along Lincoln Avenue in mid-March, offers hungry residents a list of classic sushi rolls as well as its signature sushi burritos: all the makings of a sushi roll wrapped, cut down the middle and served like a burrito.
Elaiyah Suwanmongkol, owner of the new restaurant, said she has around 20 years experience in the food industry. She said she has worked in fast food, formerly owned Thai food restaurants and is also the owner of the Sushi Box in Longmont.
She said her idea for the sushi burrito she offers came from her love of sushi and the desire to blend it with the convenience of fast food. She said since eating sushi can be difficult to do on the move, she thought it would be great to offer the sushi style while also being easy to eat on the go.
“I put it all together and it (became) a burrito,” she said. “I want something fast (and) convenient but (also high) quality.”
She said one of the reasons she decided to open her businesses, as well as previous restaurants she has owned, was because of her love of sushi and her desire to offer great food to local residents.
Since opening March 19, Suwanmongkol said community members have really enjoyed their food and the restaurant itself.
Server Kira Mallory said she anticipates the atmosphere of the restaurant, which includes Japanese wall decorations, art and a huge mural across the north wall, will draw people in.
“It’s been really cool,” she said of her time working at Sushirito so far.
Suwanmongkol said her highest priorities for her menu is quality food with a great taste that is worth the price; her highest emphasis, though, is on the quality of food she offers.
She said this comes in the ingredients that she orders to the way they prepare each roll, adding that when she makes food she cooks it with love, as if she was cooking for her own friends and family.
She said her focus is not on making money, but making great food that makes customers want to come back and get more.
“I want my customers to … love the food,” she said. “I care about quality and I care about how much I can make them happy with the food I cook for them.”
Sushirito, 556 N. Lincoln Ave., is open from 11 a.m. to 10 p.m. Monday through Thursday, 11 a.m. to midnight Friday and Saturday and noon to 8 p.m. Sunday. More information as well as photos of the restaurant’s menu fan be found on their Facebook page.
