5 ingredients that will impact the industry in 2020 - Food Dive

In 2020, both new and familiar ingredients are expected to make waves.

Each week in January, Food Dive: Ingredients took a look at an on-trend ingredient that is poised to make a difference in product launches, nutritional content and consumers' eating habits this year. 

Several ingredients are already popular in other countries while some are just starting to grow in popularity. As consumers increasingly demand plant-based options, manufacturers will turn to ingredients such as pea protein and lupini beans, which are currently more popular in Europe. Another ingredient that could make a big impact in the U.S. this year is fonio. The relatively unknown grain in Africa works well in a variety of applications and is extremely sustainable. Terra Ingredients will be the first to export mass quantities of it this year. 

There also are more familiar ingredients that are already starting to be used in more unique ways. Originally made popular in the U.S. as a pricey injectable filler to plump lips and soften lines, collagen is now increasingly finding its way into a variety of foods and beverages. But collagen isn't the only ingredient finding new uses. In conventional chocolate production, 80% of the fruit is thrown away, but manufacturers are now finding ways to use the rest of the cacao fruit.
