Whether you are feeding a family of four or are looking to expand your kitchen horizons, we have got some great dinner recipes that are too good to pass up. 

The best part is that the base of each of these recipes only requires three main ingredients. Talk about simple and easy to make! With each of our recipes, you will find additional cooking tips that give your dish an added boost of color and flavor!

Chicken Quesadillas

A classic favorite for anyone who likes a tasty Tex Mex meal is the much-loved chicken quesadilla. This dinner meal is quick, easy, and perfect for families with children. 
 

What You Need: 
  • 2 chicken breasts
  • 1 cup of cheese
  • 8 large tortillas
  • 2 T. taco seasoning
Put It Together: 

Start by seasoning your chicken breast with your favorite taco mix. Once your chicken breast is well-seasoned, cook it until it is well done. Next shred it into thin pieces and let it cool down. Next, layer half of your tortilla in cheese and top the cheese with a generous amount of your shredded chicken breast. Add a second layer of cheese on top and fold the tortilla over. Lightly grease a nonstick pan and cook your quesadilla for five minutes on medium heat until it is golden brown on each side. Once cooked, cut it into four equal parts and serve hot with your choice of pico de gallo, sour cream, or guacamole as side dips. 

Steak with Shrimp and Broccoli

This next meal is delicious, hearty, and sure to be a family favorite. For the best flavor possible, use a cast-iron pan to cook this meal and bring out the best flavors possible. If you do not have a cast-iron pan, no worries. A traditional pan will do just fine as well. 

What You Need:
  • 4 steaks (8 oz) 
  • 2 cups of jumbo shrimp
  • 2 cups of chopped broccoli
  • 4 Tb butter
  • 1 lemon (optional) 
Put It Together: 

Depending on the cut of steak you use, you may or may not choose to season it. If you do season it, any steak seasoning of your choice will work. You can never go wrong with salt and pepper either. Start by adding in 2 T. of butter to your cast-iron pan. Let the butter melt and the pan heat up before adding in your steak. Cooking time for your steak will vary depending on the cut of your steak as well as how well-done you like it. Typically, you will want to let it cook anywhere between 10-15 minutes on medium-high heat. You may need to add in slivers of butter to keep the steak and pan nice and moist throughout the cooking process. 

While your steak is cooking, in a separate pan, melt 2 T. of butter, and once the butter has melted, add in your jumbo shrimp. Season your jumbo shrimp with 1 T. of balsamic vinegar, salt, pepper, and lemon. As your shrimp cooks, add in the broccoli into the same pan as your shrimp and cover the pan. Let your shrimp and broccoli simmer on low heat.

Once your steak has finished cooking, remove the steak and place it in plates for serving. Next, add your shrimp and broccoli mixture into the cast iron pan. Let the shrimp and broccoli soak up the steak flavor leftover in the cast iron pan. Once the shrimp and broccoli are properly coated and fully cooked, add the mixture to the top of your steaks. Serve up while it is hot and ready. 

For even more flavor, you can serve up mashed potatoes and corn along with the steak. Be sure to cook the corn in the same cast-iron pan for an added boost of flavor. 

Chicken and Shrimp Tacos

If you have leftover chicken strips from your chicken quesadillas, then they will come in handy with this next recipe. If not, slice up some chicken for a fresh base. 

What You Need: 
  • 2 cups shrimp 
  • 2 chicken breasts
  • 12 small soft tortillas. 
  • 2 T. of taco seasoning
  • 2 T. Worcestershire sauce
  • 2 T. balsamic vinegar
  • 1 T. butter
  • Salt to taste 
Put It Together: 

Start by cubing your chicken breast, seasoning it in taco seasoning, and then cooking it on medium-high heat in a lightly greased large saucepan. As your chicken cooks, be sure to add salt to taste as well as 1 T. of Worcestershire sauce. Once your chicken breast is 2/3 of the way cooked, move your chicken to one side of the pan and add in your butter to the clear side of the pan.  

Once the butter has melted, throw in your shrimp and season it by adding in the balsamic vinegar, 1 T. of Worcestershire sauce, and salt. Once your shrimp is well-cooked, mix the chicken and shrimp together in the pan so that everything is well-combined. Turn up the heat to high and allow the chicken to cook thoroughly while the shrimp develops a golden-brown crust. Once everything is cooked, take it off of the heat immediately. 

Add in your mixture to your small tacos and enjoy it. To add more flavor, top your tacos with pico de gallo, sour cream, guac, a squeeze of lemon, cheese, and lettuce.
