How to make 25 fluffy crumpets using only six ingredients - and they last as long as two weeks in the fridge

While many are baking banana bread during lockdown, an Australian mum has revealed how to make homemade crumpets using her husband's recipe.

Sharing the insight to the Budget Friendly Meals Australia Facebook group, the woman said the recipe makes 25 delicious crumpets that can last up to two weeks in the fridge.  

'The ones we were putting in the fridge [are] undercooked slightly, so that when they go in the toaster they cooked perfectly,' she wrote online. 

In the caption of the Facebook post she described the tasty crumpets as 'amazing'.

To make the crumpets, the husband only used six ingredients including milk, dried yeast, caster sugar, strong white flour, bicarb soda and vegetable oil.

The woman said her husband specifically used strong white flour - also used to make bread and pasta - as it contains more gluten compared to regular white baking flour.

In the comments of the Facebook post, another home cook shared a gluten free crumpet recipe, revealing the 300 grams of strong white flour can be substituted for 500 grams of gluten free baking flour.

Since publishing the recipe online, the post has received 489 likes and numerous comments from eager home made cooks wanting to make crumpets themselves.  

'I've been craving homemade crumpets but didn't have a decent recipe until now,' one woman said online.

'My goodness! They look divine, I [want to] come to your place for breakfast,' another said.

While the post encouraged many to try the breakfast meal themselves, others said they'll stick to purchasing crumpets for the supermarket as it's a cheaper option. 

How to make tasty homemade crumpets

Ingredients 

400ml milk 

1 tablespoon dried yeast 

1 teaspoon caster sugar 

300g strong white flour 

1/2 teaspoon bicarbonate of soda vegetable oil for greasing 

Method

Gently warm the milk in a bowl, dissolve the yeast and sugar in the warm milk and 100ml of tepid water

Leave in a warm place for 15 minutes, or until frothy

Sift the flour, bicarbonate of soda and 1 teaspoon of fine sea salt into a large bowl

Make a well in the centre and pour in the yeast mixture

Whisk from the centre outwards until the consistency of double cream – this will take a few minutes

Add a splash more water, if needed

Cover with a damp tea towel and set aside for 45 minutes or until little bubbles form on the surface

Grease four 10cm egg rings with vegetable oil 

Wipe a little oil around a large frying pan or iron skillet and place over a medium-high heat

Arrange the rings in the frying pan and, once hot, spoon 4 tablespoons of the batter into each ring

Cook for 5 minutes, or until little bubbles appear on the surface

Once the bubbles have burst, leaving little holes, use tongs to carefully lift off the rings and flip over the crumpets, then cook for 1 minute on the other side

Re-grease and reheat the rings and pan before cooking the next batch
