Tap Into Flavorful Ingredients at Warwick Valley Olive Oil Company - Chronogram

Warwick Valley Olive Oil Company is not your usual taproom.

It’s a gourmand’s dream, with a wide array of spices, jams, syrups, and kitchenware. But the star of the show are the stainless-steel fustis—tanks of varying sizes with olive oils and vinegars that span a rainbow of flavors.

Looking for a nice balsamic to drizzle over your roast chicken before it goes into the oven? Try the lemongrass mint. Their gremolata olive oil would brighten a Greek salad. What about a suggestion for, say, drinks? “My husband, Chris, loves the Sicilian lemon balsamic with vodka for a great cocktail,” says Diane Zimmerli, who opened Warwick Valley Olive Oil Company with her husband in February 2015.

Inspired in Philadelphia

A 2014 visit to Reading Terminal Market in Philadelphia sparked the idea for the shop. “That place is like a food heaven, and they had an olive oil shop,” Zimmerli says. She realized Warwick was tailormade for that, given the village’s yearly Applefest, bustling tourism, and locals who appreciate gourmet items.

When the ribbon was first cut, the Zimmerlis sold mainly olive oil, salts, and jams. But over the next couple of years, the inventory grew and the shop evolved. In 2017, Grappa restaurant moved its business out of the space next door to the shop, opening up a new chapter for the Zimmerlis. “I like to cook and entertain,” Zimmerli says. “My vision was to do cooking demos, so when Grappa moved, we were able to extend into that space. The bar that was there was perfect for cooking demos.”

An archway now separates the main shop from a kitchen-centric annex. Here, a cooler holds truffle butter, pimiento cheese, and Vermont farmstead cheeses. Behind the bar are beautiful platters, trays, and cruets for sale; the bar itself is loaded with jarred pickles, jams, and dish towels with kitchenesque sayings (“Kiss My Grits,” “Mama Needs a Vacation”). Warwick Olive Oil Company whipped up its first demo around Christmas 2021. Now, a dozen eager guests belly up to that bar once a month to learn firsthand how to prepare snacks and appetizers using shop-sold products like tangerine balsamic, pickled carrots, and Soberdough beer bread mix.

Zimmerli tries to keep the demos timely and appropriate to the seasons: For example, coming up on April 5 is a Ukrainian pysanky egg-decorating workshop.

Recipes for Success

The mainstay of the shop, however, are the oils and vinegars—90 different varieties, from fused (flavored at the time of crush) and infused (flavored after the crush) olive oils to any type of vinegar you could dream of. And Zimmerli is happy to share recipes that include any of the products she sells. “I’ve tried everything in here, because you can’t sell it if you can’t stand behind it.” So she has a recipe for a baby spinach salad with their dark chocolate balsamic vinegar; a cheddar cheese cornbread with the Baklouti Chili olive oil; and even a balsamic mule with their Grapefruit balsamic vinegar (“White balsamics are basically shrubs, with no added sugars, and they’re perfect for a cocktail,” Zimmerli says).

In the center of the shop, a table holds the OG of oils: ultra premium, extra-virgin olive oils ranging from mild to robust flavors. There’s also black and white truffle oils for an earthy, luxurious option.

Each of the fustis in the shop has a card listing its origin, its flavor, and suggestions for use. If you’re a newbie to the shop, or simply overwhelmed by all the choices, Zimmerli or another staff member can pour you a sample to taste. “We used to leave the paper cups out for customers to pour themselves a sample, and we laid out bread, too; people could basically come in here and have a meal,” Zimmerli jokes. “COVID put a stop to that, but we can still offer samples.”

Pre-filled bottles line the shelves under the fustis, in 200-, 375-, and 750ml sizes. When a customer finishes a bottle, they can return it, cleaned and dried, to the shop for a refill at a 75-cent discount. Prices depend on the type and grade of product: 200ml bottles range from $15.95 to $29.95; 375ml, $20.95-$$41.95; and 750ml range from $32.95-$55.95.

During winter, the shop is open 11am-6pm Wednesday through Saturday, and 11am-4pm Sunday. Once the Warwick Farmers’ Market opens for the season, Warwick Valley Olive Oil Company will be open 11am-6pm Monday through Saturday, and 10am-6pm Sunday.
