21 Sep 2022 --- Biospringer, a player in natural yeast ingredients, helps overcome the challenges often associated with formulating appealing plant-based products with good taste, texture and overall appearance for food manufacturers. With today’s global consumers’ being more conscious about their choices and how they affect the planet, plant-based food manufacturers are looking outside of the box.
Ahead of a company webinar this week, Christelle Mouteyen-Migaud, marketing manager at Biospringer, says she predicts that fish, seafood and egg alternatives will start to boom.
“Consumers are trying to replace all existing animal products, for their health, for the planet and for animal welfare. I expect to see more alternatives to other meat products than beef and chicken,” she tells FoodIngredientsFirst.
Is yeast the answer?
According to Mouteyen-Migaud, yeast ingredients enable formulators to improve the taste of recipes by boosting some flavor notes, bringing roundness, long-lasting, vegetal, meaty or cheesy notes and sometimes by improving the nutritional profile.
“Natural yeast ingredients, although they have been used for a long time, are sometimes not known to all. We have a Culinary Center, where food scientists can help formulators get the most out of our natural yeast ingredients by showing their benefits and how to use them,” she outlines.
Biospringer offers products that are all animal-free and which will help improve taste, reduce salt, sugar and fat, mask unwanted flavor notes and add quality protein intake.
Mouteyen-Migaud believes yeast ingredients support and aid the plant-based movement.
“All our products and future innovations to come are animal-free products and will therefore help formulators continue developing the food consumers want to see on their plates,” she notes.

According to Mouteyen-Migaud, herself and her colleagues Daryl Smith, business manager, and Andrew Vasina, food Scientist at Biospringer, will explore the market trends relating to plant-based foods and beverages. She adds that listeners will learn more about how natural yeast ingredients can help them formulate tasty plant-based recipes.
Diversifying plant-based options
The industry’s race to diversify outside conventional plant and animal protein sources is primarily tied to health and climate-conscious commitments.
Notably, global consumer concerns are shifting. The health of the planet is now consumers’ top concern, in line with Innova Market Insights’ Top Trend for 2022, “Shared Planet.” Consequently, their expectations are changing, resulting in a shift in eating habits.
One of Biospringer’s protein developments is its yeast protein Springer Proteissimo 101. It is a complete protein, meaning that it contains all essential amino acids and is marketed as similar to animal proteins.
The company previously produced nutrient-dense proteins from yeast in line with market demands, which it says can answer today’s major food trends and are “ideal for developing plant-based foods.”
