Bush tucker garden promotes native ingredients such as finger limes Davidson's plums pig face - ABC News

A sour plum described as "nature's Warheads" and a flower used to help relieve sunburn are part of a new bush tucker garden promoting native ingredients at a coastal town on the New South Wales Mid North Coast.

The garden was borne out of a partnership between Aboriginal education provider Deadly Ed and a holiday park in Forster with the goal of helping locals and visitors learn about the foods of Worimi country.

"Our bush tucker gardens are a way for all visitors to the Forster-Tuncurry region to start to experience what native plants are and the cultural uses of our native plants in Australia," says Deadly Ed co-founder and Worimi man Josh Brown. 

"[They are] learning about how Aboriginal culture can reflect and be integrated into their own lives and how people can use this in their everyday cooking."

The garden is designed to teach locals and visitors about the food of Worimi country.()

Cooking with Aboriginal ingredients

Native plants can help improve physical and mental health, healthy eating and sustainability, while connecting people with culture and country, Mr Brown says. 

The garden has signs for visitors to learn and read in their own time.

"Usually we section our gardens into tools and weapons, edibles and medicinals," says Deadly Ed educator and Wiradjuri woman Madison Williams.

Ms Williams wants others to experience how powerful native plants can be. 

"You'll often find that plants have multiple uses and that's just tying into Aboriginal culture, using the whole plant instead of just little bits and pieces." 

Tiny balls of citrus

One of Ms Williams's personal favourites is the finger lime. 

"Finger lime is like your traditional lime, but when you cut it open they call it 'citrus caviar' so all these tiny balls of citrus spill out," Ms Williams says. 

"It's really fun and it's great for kids and it's a familiar flavour."

The plant pig face is used for a variety of purposes. The inside flesh can help relieve sunburn and rashes, while the succulent green leaves and bright flowers are edible.

Another ingredient in the bush tucker garden, the Davidson's plum, is a native plant endemic to northern New South Wales. 

Ms Williams describes it as "nature's Warheads" – a reference to a popular, sour, hard lolly.

"It's incredibly sour but it's great to put in desserts and add some sugar to sweeten it up a bit."

William Simon is encouraging people to try new flavours in their cooking.()

Inspiring people to experience new flavours in their cooking is important for Deadly Ed Aboriginal Coordinator and Worimi man William Simon.

"We can make lemon myrtle cookies, lemon myrtle teas and things like that," Mr Simon says.

"It's very simple and all the flavours that come from a native plant are amazing."

Indigenous tourism 

Justine Syme says she was excited to use the plant salt bush.()

Forster's Reflections Holiday Parks manager Justine Syme hopes the bush tucker garden will lead to more Indigenous tourism in the region.

"[Including] more education, or cook ups and walk-throughs of the park," Ms Syme says. 

She says it's important to celebrate the traditional land the park is located on. 

"We have already got a salad garden here but there is no connection to country." 

Mr Brown says while tourism in the region is growing, he hopes the garden will encourage Indigenous tourism. 

"I think this is a way we can really go into that space and start to help people to learn about the history of Worimi culture here in Forster," Mr Brown says.

"Who are the local people in this area, what's the history, and what's the local culture?"

Native oregano plant is known as a type of native mint and is used in recipes.()
