Best things mom buys on $100 budget at Costco for 3-ingredient meals - Business Insider

How a mom spends $112 at Costco for her family of 4, from Starbucks creamer to $5 rotisserie chicken

  • I'm a busy mom who spent about $`100 on ingredients for quick, easy meals at Costco.
  • I use Kirkland Signature fish to make our favorites, like miso-glazed tilapia and teriyaki salmon.
  • The Kirkland Signature beef bulgogi and Imperial Garden edamame mimic our go-to restaurant orders.

As a working mom of two, Costco is my one-stop shop for getting what I need for 30-minute, three-ingredient meals. On most trips, I pick up a few extras, too.

Here's what I bought on a recent trip for about $100.

Prices may vary by location.

Kirkland Signature tilapia pairs well with miso.

If I don't have the time or money to order Nobu's black cod with miso, I make the next best thing: three-ingredient miso-glazed tilapia.

I spread equal parts miso paste and mirin over Kirkland Signature tilapia filets, marinate them overnight, and bake at 400 degrees Fahrenheit for 20 minutes.

A $20 eight-pack of filets, typically around 3 pounds, is enough for at least two meals for my family of four.

The chain's beef bulgogi is great in tacos.

Kirkland Signature beef bulgogi cooks quickly and goes perfectly with plain or fried rice.

If you're into fusion, I recommend using the bulgogi for Korean-style tacos.

Just place the bulgogi on the tortillas and add your toppings of choice, such as shredded cabbage (I like to pickle mine in lime juice and soy sauce), sour cream or mayo, and Sriracha.

A 2½-pound pack comes in at just under $16 and is enough for at least two meals.

I fry the Jongga kimchi with rice.

I love to use the Jongga kimchi to make quick, easy, one-pan fried rice.

I toss chopped kimchi into a hot, lightly oiled skillet, add some liquid from the container and day-old rice, and serve the mixture as a quick dinner.

Next, I create an empty spot on the side of the pan so I can crack an egg into it.

Finally, I cover and cook everything until the egg is just a little jiggly.

The jar of kimchi, which is just over 42 ounces, is a steal at $6.90.

Kirkland Signature salmon is delicious in a teriyaki dish.

I use Kirkland Signature salmon filets to make a teriyaki-style meal.

I top the salmon with soy sauce and a tablespoon of brown sugar and broil for eight minutes.

A 2-pound pack of farm-raised Atlantic salmon filets costs about $24 and can be made into two meals for four people.

Imperial Garden organic edamame is one of my kids' favorites.

My kids always end up fighting over the edamame when we go out for sushi, so this giant bag from Imperial Garden is great to have on hand.

The individually packaged, microwaveable, organic edamame transforms from frozen to cooked in less than three minutes.

The bags contain 6 pounds of edamame divided into individual 8-ounce bags and cost $13.

I use the Starbucks caramel creamer to make milk tea.

The Starbucks caramel creamer, which is inspired by the flavor of a caramel macchiato, is a game changer.

I add it to my favorite green and black teas to make a caramel milk drink.

The 58-ounce bottle retails for about $8 at my location.

I usually stir-fry the Coastal Valley Farms organic baby spinach.

I always buy organic spinach, and the Coastal Valley Farms brand at Costco may be the best deal in town.

At 16 ounces, you don't even need to worry about the shrinkage that occurs when you stir-fry it with garlic and a little salt.

I sometimes pair it with shredded rotisserie chicken and crispy wonton wrappers (or pan-fried flour tortillas sliced into strips) for a lighter Chinese chicken salad.

A 1-pound bag is only $3.50.

Kirkland Signature rotisserie chicken is a staple in my household.

No Costco list is complete without Kirkland Signature rotisserie chicken.

I douse it in barbecue sauce, honey mustard, or chimichurri, or rub it with my favorite seasoning blend.

I like to use paprika, cumin, garlic, pepper, and lemon juice to make it taste like shawarma.

Once seasoned, I grill or bake the chicken to make it less obvious that dinner came from Costco.

A rotisserie chicken costs $5 and can be stretched to make more than one meal.

Kirkland Signature eggs can be used for countless dishes.

One of my favorite comfort foods is Chinese steamed eggs, which I usually make using a batch of Kirkland Signature eggs.

I mix four eggs with two cups of warm water and a dash of sesame oil and salt. Then, I steam them for nine to 12 minutes.

I serve the eggs with rice, and if I'm feeling fancy, garnish them with scallions or soy sauce.

A pack of 24 eggs costs $4.20.

I always buy Kirkland Signature organic low-fat milk when I'm at Costco.

Christine Ma-Kellams

I sometimes make a quiche-like version of steamed eggs with Kirkland Signature 1% low-fat milk.

I mix four eggs with two cups of warm milk, add a dash of black pepper, and pour the mixture into a pie crust.

For added flavor, I might even incorporate spinach.

A box of three half-gallons of milk, which is 24 servings, costs $12 and lasts our household well over a week.
